NORMA'S SOUR CREAM POTATOES 
8-10 med. potatoes
3 med. onions, chopped
3/4 c. butter
1/2 lb. bacon, cut in small pieces
1/2 tsp. salt
1/8 tsp. pepper
1 c. sour cream

Peel and boil potatoes until tender. While potatoes are cooking, saute chopped onions in butter. Fry bacon pieces until crisp and drain on paper towel. When potatoes are done, mash with electric mixer or by hand, add cooked onions, salt, pepper and sour cream. Potatoes will be fluffy.

Pour into a 2 quart casserole dish. Sprinkle cooked bacon bits on top. Bake in preheated oven at 400 degrees for 15-20 minutes. Serve hot as a side dish with meat. This recipe makes 6-8 servings, but it easily can be cut in half or doubled. It also reheats beautifully in a microwave or conventional oven.

Since microwave ovens vary in power, you may need to adjust your cooking time.
