1 lb. lean ground beef 1 med. onion, chopped 1 lg. eggplant, peeled and cubed 8 oz. can tomatoes, cut up 1 lb. can mushrooms 1/4 c. chopped fresh parsley 1 clove garlic, minced 1/2 tsp. oregano 1/2 tsp. rosemary, crushed 1/4 tsp. cinnamon Salt and pepper 2 eggs 1 c. plain yogurt 8 oz. pkg. Neufchatel cheese, cut up 1/4 tsp. salt In skillet cook beef and onion until meat is browned. Drain off fat. Stir in vegetables, mushrooms, herbs and seasonings. Cook, uncovered for 15 minutes stirring occasionally. Turn into rectangular baking dish. Use electric mixer or blender to blend together eggs, cheese, yogurt and 1/4 teaspoon salt until smooth. Pour over meat. bake at 350 degrees for 15 to 20 minutes. Serves 6 to 8. This recipe has 378 calories per serving for 6, or 284 calories for 8. |
