STIR FRY SHRIMP AND VEGETABLES 
Vegetables of your choice
2 tbsp. pure olive oil
Shrimp
Chicken
1 c. rice

Broccoli, cauliflower, zucchini, carrots, bell pepper, celery, onions, cabbage.

Wash vegetables, cut up in small sizes. Clean shrimp, wash and devein. Chicken wash and cut up into small pieces, only the meat (no bones). Put wok on low heat. Put all vegetables in and stir fry for 3 minutes. Take out and put aside. Add shrimp and chicken. Stir fry until shrimp is pink in color and chicken is tender. Add vegetables, stir for 1 to 2 minutes. Wash rice, put on low fire with 2 1/2 cups water. Cook for 30 minutes, turn off fire and leave covered, do not uncover, 30 minutes more.
