LENTIL SOUP 
1 c. lentils
1/2 c. chopped onions
1/2 c. chopped celery
1 tsp. oregano leaves
1 tsp. olive oil
1 tsp. tomato paste
1/4 c. vinegar
1 tsp. flour
1 mined garlic clove
3 or 4 cubed carrots
Salt and pepper to taste

In saucepan, cover lentils with water. Bring to a boil and spill water. Repeat 2 times. Don't cook after each boil as they will over cook. After third water, add onion, celery and carrots. Add salt, pepper, oregano and olive oil. Simmer until lentils are done. Add tomato paste. Dilute vinegar and flour and add to lentils. Bring to a high boil and remove from stove.
