CHEESE STUFFED ZUCCHINI 
6 (6-7") zucchini
2 eggs
1 1/2 c. sharp cheddar cheese
1/2 c. sm. curd cottage cheese
2 tbsp. chopped parsley
2 tbsp. chopped onion
1/2 tsp. salt

TOPPING:

1/2 c. crackers
1 1/2 c. slivered almonds
Paprika

Cook whole zucchini in salted water 12 minutes or barely tender. Drain and cut in halves lengthwise. Scoop out center pulp and drain. Combine with all ingredients. Fill shells with stuffing; sprinkle with topping. Arrange in greased shallow pan in single layer. Bake for 30 minutes at 350 degrees. Serves 12.
