DOUBLE CHEESE STUFFED ZUCCHINI 
4 med. zucchini, halved lengthwise, parboiled
1/2 c. rice, cooked
1 egg, slightly beaten
1 c. cottage cheese
1 sm. onion, chopped
1/2 tsp. salt
4 slices American cheese

Mix egg, cottage cheese, onion and salt together in a bowl. Scoop out centers of zucchini with a small spoon. Chop the centers into small pieces and add to egg mixture. Add rice. Arrange zucchini shells in greased, shallow baking pan. Stuff with egg and rice mixture. Bake for 30 minutes at 350 degrees. Cut American cheese into strips. Lay strips on top, bake five minutes longer or until cheese is melted.
