1 c. cheddar cheese (grated)
3 c. grated zucchini
1 c. biscuit mix
1/2 c. oil
1 tbsp. chopped parsley
4 eggs, beaten
Salt and pepper to taste

Pour in greased pie pan and bake at 375 degrees for 30-40 minutes.
