CANTALOUPE PRESERVES | |
4 c. ground cantaloupe 2 c. ground peaches 1 lg. orange, unpeeled, ground 1/2 large lemon, unpeeled ground Sugar Combine cantaloupe, peaches, orange and lemon; measure and add an equal amount of sugar. Turn into large kettle and cook over low heat, stirring frequently, until mixture is clear. Remove from heat and skim off foam quickly. Ladle into hot, sterilized half-pint jars, leaving 1/4 inch headspace. Adjust lids and process in boiling water bath 5 minutes. |
