PEA SALAD | |
10 oz. frozen peas 1 c. sliced celery 1 c. cauliflower, chopped 1/4 c. diced green onion 2 tbsp. sliced pimento 1 c. roasted cashews, macadamia nuts, or sunflower seeds 1/4 c. crisp, crumbled bacon (a little more OK) 1/2 sour cream 1 c. HIDDEN VALLEY® Ranch dressing (I add 1/2 pkg. dry dressing mix for extra flavor) 1/2 to 1 tsp. dijon mustard 1 sm. clove garlic, minced Rinse peas in hot water; drain. Combine veggies, nuts, and bacon with sour cream. Mix dressing, mustard, and garlic together. Pour over salad; toss. Chill at least 2 hours. Serves 4. |
