PACKINGHOUSE STRAWBERRY PIE 
3 egg whites
1/2 tsp. baking powder
1 c. sugar
10 single saltine crackers, crushed
1/2 c. finely chopped pecans
1 qt. fresh strawberries, hulled, cleaned and sliced
1/2 pt. heavy cream, sweetened and whipped

Preheat oven to 300 degrees. Beat egg whites with baking powder until stiff, gradually adding sugar. Remove from mixer and fold in crackers and pecans. Pour into a well buttered 10 to 11 inch pie plate. Shape with spatula to conform to shape of pie plate. Bake for 30 minutes. Cool completely. Top with the berries and garnish with whipped cream.
