COCONUT OR CHOCOLATE CREAM PIE 
1/2 c. sugar
1/2 tsp. salt
3 tbsp. cornstarch
2 1/2 c. milk
1/2 c. coconut
3 egg yolks
1 tsp. vanilla

Cook the sugar, salt, cornstarch and milk in double boiler until thickened, stirring constantly. Add beaten egg yolks and continue cooking 5 minutes. Cool slightly then add 1/2 cup coconut. Pour into baked pie shell. Top with meringue made of 3 egg whites, 4 tablespoons sugar and 1/2 teaspoon vanilla. Brown in oven.

(For chocolate cream substitute 3 tablespoons cocoa for coconut and add at beginning with milk, salt, cornstarch and an extra 1/8 to 1/4 cup sugar.)
