SWEET POTATO CASSEROLE WITH CRUNCHY TOPPING | |
3 c. mashed sweet potatoes 1 c. sugar 1/2 tsp. salt 1/3 stick butter, melted 1/2 c. evaporated milk 1 tsp. butter flavoring (not necessary if butter used instead of butter) 2 eggs, beaten Combine potatoes, sugar, salt, butter, milk, flavoring and eggs. Turn into greased 8 x 8 x 2 inch baking dish. Sprinkle with topping (below). TOPPING: 1 c. light brown sugar 1/3 c. self-rising flour 1/3 stick butter 1 c. chopped nuts Blend together and sprinkle on potatoes mixture. Bake at 350 degrees for 30 minutes. |
