CARAMEL TOPPED SWEET POTATOES 
1 lg. can sweet potatoes
2 eggs
Dash cinnamon or nutmeg
1/2 c. nuts
12 tbsp. butter
1 1/2 c. sugar
1 can evaporated milk
1 c. corn flakes
1/2 c. brown sugar

Cream potatoes and 6 tablespoons butter. Add sugar and eggs, beating well. Add milk and spice. Put in long buttered casserole dish. Cook 15-20 minutes in 400 degree oven.

Topping: Combine corn flakes, nuts and brown sugar. Melt 6 tablespoons butter. Pour over corn flakes, nuts and brown sugar. Mix well. Spread over casserole. Bake 15 minutes longer.
