SWEDISH ROAST CHICKEN, TURKEY,
BEEF, OR LAMB
 
1/2 tsp. sugar
1 tsp. salt
1/2 tsp. celery seed
1/8 tsp. sweet basil, for beef or lamb
1/8 tsp. sage, for chicken or turkey
8 prunes
1 onion, halved
Meat for roasting

Combine seasonings in a small bowl. Wash and dry meat. Rub seasonings onto meat. For chicken or turkey also rub some inside the bird. Place meat on roasting rack in large pan and place 8 prunes around it. Add water and onion to help make the gravy brown and tasty. Roast meat uncovered until tender, making sure water does not boil away. Serve prunes as a treat and use juice for gravy.
