DOCTOR BIRD CAKE 
3 c. sifted flour
1 tsp. baking soda
1 tsp. cinnamon
2 c. sugar
1 tsp. salt
1 1/2 c. oil (2 sticks butter, with enough oil to finish out 1 1/4 c.)
1 (8 oz.) can crushed pineapple with juice
1 1/2 tsp. vanilla
3 eggs
2 c. diced very ripe bananas

Measure and sift dry ingredients together. Dice bananas, measure quantity and add to the dry ingredients along with oil, vanilla, eggs and crushed pineapple with its juice. The mixture is stirred to blend but is not beaten. It is then poured into a greased 9-inch tube pan and baked at 350 degrees for 1 hour 20 minutes. Set aside to cool on a rack without removing from pan.
