BEST EVER MUSHROOM SCALLOPED
POTATOES
 
8 cups thinly sliced & peeled potatoes
1 large onion
1 tablespoon butter/garlic butter
8-12 large fresh mushrooms, thinly sliced
2 cans Cream of Mushroom soup
1 cup milk (skim, 1%, 2%)
1 1/2 cups shredded Cheddar cheese
sea salt, to taste
freshly ground pepper, to taste
paprika, to taste

Combine soup, milk and spices in a bowl. Sauté thinly sliced onion rings in 1 tablespoon butter.

Lightly oil a casserole dish or glass lasagna pan with olive oil.

Arrange potatoes in a single layer in bottom of dish. Drizzle soup mixture over top.

Arrange onions and mushrooms. Sprinkle cheese over each layer.

Continue to layer in this manner until all ingredients are used up.

Bake at 375°F for approximately 1 hour or until potatoes reach desired texture.

For a crispy top layer, uncover during the last 10-15 minutes of cooking time.

It has become my husbands favorite. I par-boil the potatoes ahead of time thus cutting the over time down to about 30 minutes. great if you want to make ahead and bake later in the day:)

I loved this recipe and followed it the first time exactly. Very yummy! The 2nd time I cooked it I deleted one can of Mushroom soup and added Campbells Cream of Celery soup. Just as yummy!!

Delicious, my first attempt at scalloped potatoes! After reading a few recipes I decided on this one. What a hit! I had a few more mushrooms than mentioned, sliced them a little thick & sautéed them in a separate pan before assembling. Sprinkled some parmigiana on top before putting in the oven.

I have ALWAYS loved scalloped potatoes...my husband however, has not. This recipe was a winner for both of us. He told me it was the best scalloped potatoes he had ever tried and even ate thirds!!!I like using thick cubed ham in addition to make this a main course.

I leave out the butter and mushrooms and layer thinly sliced potatoes and cream of mushroom soup diluted with 1/2 cup milk. On top of the potatoes and soup , I cut up some onion, jalapeño pepper, garlic and celery. Then I put another layer ending with a little cheddar cheese. I microwave it for 8 min. And then cook at 325°F for 20 minutes. Saves time when I am in a hurry. When I am not rushed, I cook at 375°F for 30-40 minutes.

You gotta try ground chuck instead of ham - it is so delicious if you've never tried it and if you love beef you gotta try this. I cube mine or you can purchase the frozen hash browns and use the same ingredients... Ummm, ummm good... I think..
