1 tbsp. chopped onion 1 tbsp. chopped parsley 1 tsp. melted butter 1/2 c. crushed club crackers 2 tbsp. mayonnaise 1 egg, slightly beaten 2 tbsp. heavy cream 2 tsp. Worcestershire sauce 1 tsp. fresh lemon juice 1 tsp. salt 1/4 tsp. white pepper Dash hot pepper sauce 1 lb. crabmeat Dry bread crumbs Vegetable oil Cook onions and parsley in butter until tender, in small skillet. Combine cracker crumbs, mayonnaise, eggs, cream, Worcestershire sauce, lemon juice, salt, pepper, and hot pepper sauce in large bowl. Stir in crabmeat. Shape into 6 patties. Coat with bread crumbs. Cook patties in hot oil until lightly brown, about 3 minutes on each side. Makes 6 patties. |
