SWEET AND SOUR 
1 lb. smoked sausage in 3/4 inch pieces (can use boneless chicken or beef)
1 sliced green pepper
1 sliced med. onion
1 tbsp. butter
1 tbsp. cornstarch
1 tbsp. vinegar
1/2 tsp. ground ginger
1 tbsp. soy sauce
1/2 c. apricot preserves
1 c. fresh or canned pineapple chunks
Cooked rice

Cook meat, green pepper and onion in butter for 5 minutes. Combine cornstarch and ginger. Stir in vinegar. Add soy sauce and preserves. Add pineapple. Stir into meat mixture. Heat through. Serve over rice.
