ST. PATRICK'S CUP CAKES | |
1 1/3 c. flour 4 oz. pkg. pistachio instant pudding 3/4 c. miniature chocolate chips 2/3 c. sugar 2 1/2 tsp. baking powder 1/2 tsp. salt 2 eggs, beaten 1 1/4 c. milk 1/2 c. oil 1 tsp. vanilla or 1/2 tsp. almond extract Mix together flour, pudding, chocolate chips, sugar, baking powder and salt. Mix together remaining ingredients in a separate bowl then add to above. Bake at 375 degrees 18 to 20 minutes. Use paper cupcake liners. Makes 18. We use cream cheese frosting then sprinkle with green sugar. |
