COCONUT CREAM PIE 
1 c. sugar
1/2 c. all purpose flour
1/4 tsp. salt
3 c. milk
4 eggs
3 tbsp. butter
1 1/2 tsp. vanilla
1 c. coconut

In a saucepan combine sugar, flour and salt. Gradually stir in milk. Cook over medium heat until thick. Remove from heat. Separate egg yolks from whites. Beat egg yolks slightly. Gradually stir 1 cup of hot mixture into yolks. Return egg mixture to saucepan. Cook 2 minutes more.

Stir in butter, vanilla and coconut. Pour into unbaked pie shell. Beat egg whites and 1/2 teaspoon cream of tartar. Spread over pie with 1/3 cup coconut on top. Bake at 350 degrees until brown.
