ZUCCHINI WHOOPIE PIES 
1 c. grated zucchini
1 c. sugar
1 tsp. baking powder
1 tsp. baking soda
1/2 c. vegetable shortening
1 egg
2 1/2 c. flour
1 tsp. cinnamon
1/2 tsp. cloves
1 tsp. salt
1/2 c. milk
1 tsp. vanilla
1 c. chopped nuts

Mix together first 6 ingredients. Sift together dry ingredients. Add milk and mix until smooth. Stir in vanilla and nuts. Drop onto greased cookie sheet. Bake 8-10 minutes at 375 degrees.

Makes 12-14 pies.

FILLING:

8 oz. cream cheese
3 tbsp. soft butter
1 lb. box confectioners' sugar
2 tsp. vanilla

Blend all together well and spread between pies.
