ZUCCHINI - WHOOPIE PIES 
1 c. grated zucchini
1 tsp. baking powder
1 tsp. baking soda
1 c. sugar
1/2 c. shortening
1 egg
2 c. flour
1/2 tsp. cloves
1 tsp. cinnamon
1 tsp. salt
1/2 c. milk
1 tsp. vanilla
1 c. nuts, chopped (optional)

Preheat oven to 375 degrees.

CREAM CHEESE FILLING:

1 (8 oz.) pkg. cream cheese, softened
1 lb. confectioners sugar
3 tbsp. soft butter
2 tsp. vanilla

Mix together first 6 ingredients. Sift dry ingredients and alternately milk with dry mixture until milk is gone and mixture is smooth. Stir in vanilla and nuts. Drop by tablespoonsful onto lightly greased cookie sheet. Bake about 10 minutes at 375 degrees. Cool. Fill with cream cheese filling.

If you want to double pie recipe, you do not need to double filling recipe. It will be more than enough. Kids love these. My two teens won't eat zucchini; but they gobble these down.

For smaller children, I usually cut pies in half.
