BEEFY CORNBREAD 
1 c. yellow corn meal
2 eggs
1/2 tsp. baking soda, baking
1 (17 oz.) can of cream corn
1 tbsp. yellow corn meal
1 onion, chopped
2 c. shredded Cheddar cheese
1 c. milk
3/4 tsp. salt
1/4 c. bacon drippings
1 1/2 lb. ground beef

Combine 1 cup cornmeal, milk, eggs, salt and soda, bacon drippings and corn. Brown beef. Sprinkle 1 tablespoon cornmeal in greased 10 1/2 cast iron skillet. Pour 1/2 of the batter into skillet sprinkle evenly with beef. Top with onion and cheese. Pour remaining batter over top bake at 350 degrees for 50 minutes.

Serves 6 to 8.
