BAKED MUSTARD CHICKEN 
4 chicken breast halves, skinned
1/4 c. mustard (spicy brown, tarragon mustard, whatever)
1/2 c. Italian flavored bread crumbs
1/4 c. butter, melted
2 tbsp. lemon juice
2 tbsp. water or white wine
Paprika (optional)

Brush chicken with mustard and dredge in bread crumbs on both sides. Place in 13 x 9 x 2 inch baking dish that has been sprayed with Pam. Combine butter, lemon juice, and water or whit wine; drizzle over chicken. Cover and bake at 350 degrees for 45 minutes. Remove cover, sprinkle with paprika if desired and bake an additional 15 minutes. Serve with rice. Yields 4 servings. If using boneless chicken, bake 45 minutes total.
