INSOLATA ITALIANA WITH CHIANTI
DRESSING
 
1 sm. head lettuce, cut in chunks
1/2 can chick peas, drained
1 lg. pimento, cut in strips
3 scallions, chopped
1 lg. tomato, peeled and chopped
1/4 lb. thinly sliced Genoa salami, cut in strips
2 hard boiled eggs, chopped
1/4 c. Parmesan cheese

CHIANTI DRESSING:

2/3 c. mayonnaise
2 tsp. ketchup
1/4 tsp. garlic powder
1 tsp. red wine vinegar
2 tsp. lemon juice
3 tbsp. cold water
Pinch of sugar

Mix Chianti dressing well with wire whisk until it is smooth. Toss all salad ingredients, except Parmesan cheese, together and add desired amount of dressing. Toss again. Sprinkle Parmesan over top and serve.
