ZUCCHINI CASSEROLE 
3 c. zucchini, chopped
1 c. chopped celery
1 c. chopped onions
1 1/2 c. water

Boil these ingredients for 5 minutes. Drain off at least half the water and add:

1 stick butter
1 sm. can mushrooms, drained
2 beaten eggs
1 c. cracker crumbs
1 c. Cheddar cheese, shredded

Bake in 2 quart casserole at 350 degrees for 45 minutes. Add extra cheese on top.
