ZUCCHINI CASSEROLE 
6 med. zucchini squash, chopped
1 sm. onion, chopped
1 egg, well beaten
2/3 c. bread or cracker crumbs
Salt and pepper
4-5 strips bacon

In buttered casserole dish put squash mixed with eggs. Mix in onion, salt, and pepper. Cover with bread crumbs; top with bacon. Sprinkle with Parmesan cheese.

Bake at 350-400 degrees for 30-45 minutes.
