HOT POTATO CASSEROLE 
1 lg. pkg. hash browns, thawed
1/2 c. melted butter
1 tbsp. salt
1/2 tsp. pepper
1/2 c. chopped onion
1 can cream of chicken soup (do not add water)
2 c. grated cheddar cheese
2 c. sour cream

Mix all together and pour into greased casserole. Mix 1/4 cup melted butter and 2 cups cornflakes and sprinkle over top. Bake at 350 degrees for 1 hour. This makes a large casserole.
