CHICKEN HOT DISH CASSEROLE (FOR
A CROWD)
 
1 (16 oz.) pkg. Chow Mein noodles
2 whole chickens, cooked and cut in bite-size pieces
4 (10 oz. ea.) cans cream of chicken soup
4 (10 oz. ea.) cans cream of mushroom soup
4 (4 oz. ea.) cans sliced mushrooms, drained
4 cups mayonnaise
4 cups or bags of slivered almonds (optional)
4 cups cut-up cooked asparagus
2 lb. grated sharp Cheddar cheese
4 green peppers, chopped
4 heads garlic, peeled and minced
4 small jars of drained, chopped pimento

Remove bones from chicken. Mix all together and bake 1 hour at 350°F.

Yield: Serves 24-30 people (about 6 aluminum steamer pans).
