STUFFED PEPPERS 
4 lg. green peppers
1 lb. ground beef
2 c. cooked rice (2/3 c. raw)
1/4 c. chopped onion (optional)
1/4 c. ketchup
1 egg

Cut off and retain tops of peppers. Remove pith and seeds from inside of top and body of peppers. Combine egg, rice, ground beef, onion and ketchup. Stuff mixture into each pepper body. Replace tops and secure with toothpicks. Place in a casserole dish and bake at 350 degrees for 1 1/4 hours.
