PEPPER RICE 
1 recipe as directed on pkg. (1 c. raw rice or 3-4 cooked rice)
Add 2 chicken bouillon to rice
1 lg. green pepper, chopped
1 lg. onion, chopped (saute in 1 tbsp. oil)
1 (4 oz.) can green chilies (add to onions & peppers)
1 can pitted ripe olives, chopped
1 can black eyed peas, drained & rinsed (peas optional)
1 (8 oz.) pkg. Monterey Jack or muenster cheese, sliced

Mix rice, peas, peppers, onions and olives. Cover with sliced cheese and bake at 350 degree oven for 30-45 minutes. 15-20 minutes in microwave.

Since microwave ovens vary in power, you may need to adjust your cooking time.
