STUFFED FLANK STEAK | |
2 onions, chopped 1 bunch scallions 1 red Italian pepper 1-2 cloves garlic, crushed Dash of Tabasco sauce Salt & pepper to taste 4 corn muffins, crumbed 1 flank steak, split open & marinated in lemon juice 1 green Italian pepper 1 c. beef broth 1 (8 oz.) can tomato juice Saute onions, garlic and chopped peppers in small amount of oil until wilted. Add corn muffin crumbs and mix well. Moisten well with 1/2 to 1 cup beef broth. Cook about 5 minutes. Spread mixture on steak and roll jelly roll style and tie in about 6 places with kitchen string. Then place in oven with thinly sliced onion and garlic and 1 can tomato juice. Bake for 1 hour. Serve with rice and black beans. |
