PROSCIUTTO AND GRILLED -
VEGETABLE
 
1 c. grilled mushrooms, cut in halves
1 tbsp. chopped fresh parsley
1/8 tsp. salt
1/8 tsp. crushed red pepper
8 thin slices prosciutto (Italian ham)
4 long, thin breadsticks, broken in halves
8 thin slices Genoa salami
4 oz. Fontina or Provolone cheese, cut in sticks
4 slices grilled eggplant
2 halves grilled zucchini
4 halves grilled yellow summer squash
1 1/2 c. sliced grilled red, green & yellow bell peppers

1. Mix mushrooms, parsley, salt and red pepper in a small bowl. Place on serving platter.

2. Wrap ham around breadsticks and salami around cheese. Arrange on platter with remaining ingredients. Makes 4 servings.
