RAISIN MUFFINS 
1 1/4 c. flour
3 tsp. baking powder
1/2 tsp. salt
1/2 c. sugar
3 c. raisin bran cereal
1 1/4 c. milk
1 egg
1/3 c. shortening or vegetable oil
Extra raisins to taste (opt.)

Sift together flour, baking powder, salt and sugar. Set aside. Mix raisin bran and milk. Stir to combine and let stand until cereal is softened. Add egg, shortening and raisins. Beat well. Add dry ingredients to cereal, stirring only to combine. Pour into greased muffin pans. Bake at 400 degrees for 25 minutes.
