POTATO CASSEROLE 
8-10 cooked, peeled, chopped potatoes
1/4 c. butter, melted
1/4 tsp. pepper
1 tsp. oregano
1 can cream of celery soup
1 pt. sour cream
1 pkg. ranch or creamy herb dressing
1/2 c. each of chopped onion, celery, green pepper
1 can mushrooms, stems and pieces
2 c. shredded sharp Cheddar cheese

1. Combine butter, pepper, oregano, soup, sour cream, dressing mix and cheese.

2. Mix potatoes with onion, celery, green pepper and mushrooms.

3. Mix together potato mixture and sour cream mixture.

4. Put in 9 x 13 inch pan.

5. Top with: 2 cups crushed cornflakes, 1/4 cup butter, melted.

6. Sprinkle with some shredded Cheddar cheese (optional).

7. Bake at 350 degrees for 45 minutes.
