CINCINNATI CHILI | |
2 lb. of ground sirloin or ground round only 1 qt. water 1 tsp. cinnamon 1 tsp. cumin 1 tsp. Worcestershire sauce 1 tsp. vinegar 1 toe garlic (chopped fine) 1 bay leaf 2 lg. onions, chopped fine 2 heaping tbsp. chili powder 1 tsp. black pepper 1/2 tsp. white pepepr 1 tbsp. salt 1 1/8 tsp. ground allspice 1 (6 oz.) tomato paste 1 lg. can tomato sauce 1 c. chili beans, if desired Crumble ground meat (sirloin). Do not brown. Crumble in 1 quart water. Add all other ingredients except chili beans. Bring to a boil, cut to a simmer for 3 hours, stirring now and then. Simmer until desired thicknerss. Then add chili beans until beans are hot. Remove bay leaf. Suggested ways to serve: 1. Chili with fine grated cheese and crackers. 2. Way spaghetti topped with chili. 3. Way spaghetti - chili and cheese. 4. Way spaghetti - chili, cheese and onions. 5. Way spaghetti - cvhili, cheese, onion and beans. Coney's weiner on bun, with chili, onion and cheese. |
