ZUCCHINI PATTIES 
2 c. zucchini, grated
1 c. flour
1 tbsp. baking powder
2 eggs
1/4 c. onion flakes or 1 onion, chopped
salt and pepper to taste
1/4 c. grated cheese (Romano or Parmesan)
garlic powder to taste
3 tbsp. parsley

In a large bowl, mix the ingredients well. Batter should be a little thick. If too thin, add a little flour to thicken. In a large skillet, heat oil to very hot°F. Drop batter by tablespoon into hot oil. Fry 3 to 4 minutes on each side. When done, place patties on paper toweling to absorb excess oil. (Do not try baking, as batter will not cook inside.)

Yield: Approximately 14 patties.
