SQUASH CASSEROLE PARMESAN 
5 med. yellow squash, sliced
1 med. onion, diced
1/4 c. water
2 tsp. sugar
Salt to taste
1 lg. egg, beaten
1/2 c. milk
1/2 c. Parmesan cheese
2 tbsp. butter, melted

Cook squash and onion in water, sugar, and salt until tender. Drain off liquid. Put in mixing bowl and beat until smooth. Add the remaining ingredients and pour into a greased 2 quart casserole dish. Bake at 350 degrees for 30-40 minutes. The mixture will become set and slightly browned on top.
