BLUEBERRY OR BLACKBERRY BUCKLE | |
1 c. all-purpose flour 1 1/2 tsp. baking powder 1/4 tsp. salt 1/2 c. butter 1/2 c. sugar 1 egg 1/3 c. milk 1 tsp. vanilla 2 1/2 c. fresh or frozen unsweetened blueberries or blackberries TOPPING: 1/4 c. sugar 1/4 c. all-purpose flour 1/2 tsp. ground cinnamon 3 tbsp. butter Stir together the 1 cup of flour, the baking powder and salt; set aside. In a mixing bowl, beat together the 1/2 cup butter and the 1/2 cup sugar until fluffy. Add egg, beat until smooth. Combine milk and vanilla. Add dry ingredients and the milk alternately to the beaten mixture, beating at low speed of electric mixer after each addition. Pour batter into a greased and floured 1 1/2 quart oval baking dish. Spoon berries evenly over batter. TOPPING: Combine the 1/4 cup of sugar, 1/4 cup flour and cinnamon. Cut in the 3 tablespoons butter until crumbly, sprinkle over berries. Bake in a 375 degree oven for 35 to 40 minutes. Makes 6 to 8 servings. |
