POTATO SKINS | |
5 or 6 med. red potatoes, unpeeled 1/4 lb. grated cheddar cheese 1/4 lb. Swiss cheese, grated 1/4 lb. Mozzarella cheese, grated 2 tbsp. butter Salt to taste Sour cream Preheat oven to 350 degrees. Wash potatoes; place in large pot and boil until tender. Grease skillet or baking dish. Remove potatoes from pot; slice lengthwise into eighths. Arrange in skillet or baking dish in even single layers. Salt to taste and dot with butter. Sprinkle with cheeses and bake in 350 degree oven until cheese is melted 7 to 10 minutes. If desired you may brown cheese in broiler. Serve with sour cream. |
