STEAK SALAD 
10 oz. steak sirloin
6 new potatoes, cooked and quartered
1 jar marinated artichoke hearts
1/2 can black olives
1 red pepper, julienned
1 green pepper, diced
8 green onions, sliced

Cook steak rare, combine all ingredients and toss with dressing (dressing will "cook" the steak to medium).

DRESSING:

1/4 c. red wine vinegar
2 tbsp. dijon mustard
1/2 tsp. sugar
1 tbsp. Parmesan cheese
1 tsp. water
1/4 tsp. salt and pepper
1/2 to 3/4 cup olive oil

Mix and shake.
