FREEZER PICKLES | |
2 c. sugar (1 qt.) 1 c. vinegar (1 pt.) 1 tbsp. salt (2 tbsp.) 1 tsp. celery seed (2 tsp.) 7 c. thinly sliced cucumbers (14 c.) 3 med. onions, sliced (6 onions) 1 green pepper (2 peppers) Numbers in parenthesis is for a double recipe. 1. Combine in large container: sugar, salt, vinegar and celery seed (I add 1 teaspoon alum). 2. Pour over the pickles, peppers and onions. 3. Cover for 24 hours in refrigerator. 4. Place in small containers and place in freezer. NOTE: You may add more peppers and even cauliflower and celery if you want but soak the vegetables with the cucumbers, onions and peppers. |
