SALMON BAKED IN POTATO SHELLS 
1 lb. canned salmon
8 med. baked potatoes
1/2 c. milk
1 chopped onion
Salt
Pepper
1 c. bread crumbs
2 tbsp. butter

Flake salmon removing all skin and bones. Slice off tops of potatoes and scoop out contents. Mash thoroughly, adding milk, onion and seasonings to taste. Add salmon. Mix lightly. Stuff mixture in potato shells. Cover with crumbs. Dot with butter. Bake in 400 degree oven, 25 minutes. Serves 6 to 8.
