SKILLET CHICKEN TETRAZZINI 
3 tbsp. butter or chicken fat
1 onion, chopped
1 stalk celery, chopped
2 c. cut-up chicken
1 1/2 tsp. salt
1/4 tsp. pepper
1 c. cream of chicken soup
2 1/2 c. chicken broth
1 c. sliced mushrooms
2 c. uncooked fine spaghetti
1/2 c. Parmesan cheese

Melt butter in skillet; add onion and celery. Cook until clear. Arrange chicken layers, then add spaghetti, chicken soup, broth, mushrooms, salt and pepper. Place Parmesan cheese on top. Cover and cook on range for 1/2 hour. Do not stir.
