CRISPY CHEDDAR CRACKERS 
Nonstick spray coating (ex. Pam)
3/4 c. flour
1/4 c. ground walnuts
1/2 tsp. paprika
1/4 tsp. onion powder
3 tbsp. butter, softened
1 c. shredded Cheddar cheese (4 oz.), room temp. (not preshredded cheese)
1-2 tbsp. cold water

Spray baking sheet with nonstick spray coating. Set aside. In a medium mixing bowl, stir together flour, walnuts, paprika and onion powder. Cut in butter until mixture resembles coarse crumbs. Stir in cheese. Sprinkle 1 teaspoon of the water over part of the mixture; gently toss with a fork. Repeat until all is moistened.

Form dough into a ball; flatten slightly. Roll 1/8 inch thick. Cut dough with a 2 inch round cookie cutter, rerolling trimmings. Transfer to the prepared baking sheet. Bake in a 350 degree oven about 12 minutes or until golden. Remove; cool on a wire rack. Makes about 55 crackers, about 15 servings.

For Ground Walnuts: Place walnut pieces in a blender container or food processor bowl. Blend or process until finely ground. (Use the same measure of walnut pieces as you need to ground walnuts.)
