SAUSAGE AND CORN CASSEROLE 
1 lb. Owens hot sausage
1 lg. onion chopped
2 c. grated carrots
1 tsp. salt
1 egg, beaten well
1 lg. can whole kernel corn
2 c. cooked rice
1/2 c. chopped jalapenos
1/2 tsp. black pepper
1/2 c. buttermilk

Brown sausage slightly. Add onions and peppers and finish browning. Mix in other ingredients. Pour into casserole dish that has been lightly greased. Bake at 325 degrees for 30 minutes. Remove from oven and sprinkle a cup of grated jack cheese over top. Return to oven for 15 minutes.
