SQUASH CASSEROLE 
2 pkg. squash (yellow long neck), cut up
Chopped onions
Salt and pepper to taste
1 c. sour cream
1 c. cream of mushroom soup
1 c. shredded carrots
1 box Stove Top stuffing
1/2 c. butter
Grated cheese

Boil squash, onions and salt for 5 to 10 minutes. Drain well. Mix sour cream, soup and carrots with boiled squash. Mix together stuffing and butter. Put 1/2 stuffing mix in bottom of 9 x 12 inch pan. Pour in squash mixture. Add remaining stuffing on top of squash. Top with grated cheese. Bake until tender, or desired temperature.
