COCONUT PIE WITH BUTTERMILK 
1 c. coconut
2 c. sugar
2 tbsp. flour
4 eggs, beaten
1/4 lb. butter, melted
1 tsp. vanilla
1/3 c. buttermilk
1 9" pie crust

Brown crust, brush with melted butter; spread coconut on crust. Mix sugar, flour, beaten eggs, melted butter and vanilla. Pour over coconut and bake at 350 degrees until middle sets.
