ZUCCHINI LASAGNA | |
In order of assemble: 1. LASAGNA NOODLES: 9 for single layer. Cook as package suggests and lay in bottom of casserole dish. 2. SAUCE: (with or without ground beef): 1 clove garlic 1 onion, chopped 1 tbsp. basil 1 tsp. oregano 1 tbsp. parsley 1/2 tsp. salt No. 1 can tomatoes 2 (8 oz.) cans tomato paste Simmer 30 minutes. (Can use Prego instead.) Add a layer of sauce. Save enough for top. 3. CHEESE LAYER: 3 c. cottage cheese (2%) 2 beaten eggs 1 tsp. salt (or less) 2 tsp. parsley flakes 1 c. grated Parmesan cheese 4: 6 oz. Mozzarella cheese, grated 5.: Zucchini, sliced cooked 6.: Last layer, add remaining sauce. Sprinkle Parmesan on top. Bake 375 degrees for 30 minutes. Can be frozen. |
