BEEF & CORN CASSEROLE 
1 lg. red bell pepper, seeded & cut into thin strips (1 1/2 c.)
8 oz. cooked ground beef, broken into sm. pieces
2 c. drained canned whole kernel corn (no sugar)
1/2 tsp. salt
Dash of pepper
2 1/2 c. hot cooked broccoli florets

In nonstick skillet that has been sprayed with nonstick cooking spray, cook red pepper strips until softened. In a 1 1/2 quart casserole combine beef, corn, red pepper strips, salt and pepper; toss well. Bake 30 minutes at 350 degrees. Serve over hot broccoli. (Makes 2 servings.) Serve with 1 cup tossed salad. Single serving = 4 ounces protein, 1 cup starch, 1 cup vegetable, 1 cup salad.
